Make the mushroom carnitas: Preheat the oven to 400°F.

Using your fingers, tear the mushrooms into thin shreds. If there are any tiny mushrooms, you can leave them whole.

In a large bowl, toss the mushrooms with the olive oil, garlic, and salt. Massage the mushrooms until they’re well coated and slightly softened.

Spread the mushrooms in one even layer over a baking sheet. Use 2 sheets if necessary to avoid overcrowding the mushrooms. Roast for 12 to 15 minutes, until the mushrooms are dried and slightly crispy. Set aside the mushrooms to cool. Once they’re cool enough to handle, roughly chop the mushrooms.
