King Ranch Chicken Casserole

The King Ranch is one of the oldest and biggest cattle ranches in the country, but there’s no evidence that this popular chicken casserole was ever served there. It’s more likely that someone co-opted the King name to make a “canned-soup-and-chicken-casserole” seem fancier—I’m betting it was the Campbell’s Soup company itself. Regardless, it’s comforting, it’s cheap, and it’s easy as hell. We ate it often when I was a kid. It’s a great way to use leftover chicken or turkey (Hello, day after Thanksgiving!) and it freezes well, too. It’s a perfect choice for potlucks or to bring to a family with a new baby.
1 10¾-ounce can condensed cream of chicken soup
1 10¾-ounce can condensed cream of mushroom soup
2 cups chicken broth
1 10-ounce can chopped tomatoes with green chiles, juices reserved
12 corn tortillas, quartered
3 cups diced cooked chicken or turkey
2 cups grated mild Cheddar or American cheese
1 cup diced onion
