1 pound (4 sticks) unsalted butter
In a small saucepan over medium heat, melt the butter. Simmer until the cloudy milk solids separate and sink to the bottom of the pan. Remove from the heat and strain the clear, yellow liquid into a glass jar; discard the white, cloudy bits. Once cooled, cover and refrigerate until ready to use.
