Chocolate Cake the Creole Way

You might this creole inspired chocolate cake looks like a simple chocolate cake. However, it is not quite the truth. This chocolate cake is very special, as it is done the Creole way. When you take your first bite, you will be able to enjoy the wonderful feeling of being in Louisiana for dessert time. Don’t worry the cake isn’t spicy itself, but you won’t know what it’s like to bake a cake with a Creole twist until you make one. So, go ahead!

Servings: 8-12

Preparation time: 55 minutes

Ingredients:

• 2 cups sugar

• 1⁄2 cup cocoa

• 2 cups flour

• 1 teaspoon baking soda

• 1⁄2 cup buttermilk

• 2 eggs

• 1⁄2 cup vegetable oil

• 1 tablespoon vanilla

• 1 cup boiling water

Topping:

• 2⁄3 cup evaporated milk

• 1⁄4 cup margarine, melted

• 3⁄4 cup chopped pecans

• 1 cup angel flake coconut

• 1 1⁄2 cups brown sugar, packed

• 1 teaspoon vanilla

Method:

Preheat oven to 325 degrees.

Mix the dry ingredients in a bowl.

In a second bowl, mix the wet ones.

Combine both mixtures and pour the batter into a greases pan.

Bake in the oven for 40 minutes

Meanwhile, in n a saucepan, prepare the topping: melt the butter, add the sugar and vanilla.

Once the cake comes out of the oven, pour the sauce and sprinkle the coconut and pecans also.

Let it cool down for little while before cutting and serving.
