This comforting, humble, and undeniably delicious casserole was one of my favorite dishes as a kid. Although it’s commonly made with beef, I prefer to use the traditional ground lamb.

YIELD 10 to 12 servings

PREP TIME 10 minutes + making the mashed potatoes

COOK TIME 55 minutes

2 tbsp unsalted butter

1 large yellow onion, diced

2 medium carrots, diced

2lb (907g) ground lamb

½ tsp kosher salt

½ tsp freshly ground black pepper

5 tbsp all-purpose flour

1 tbsp tomato paste

¼ cup (60ml) heavy cream

1¾ cups (420ml) low-sodium chicken broth

¾ cup (180ml) light beer

2 tbsp soy sauce

2 tsp minced fresh thyme

1 cup (140g) frozen peas

4 cups (840g) Velvety Mashed Potatoes

1 egg yolk

1 tbsp water

freshly grated Parmesan cheese (optional)
