Vietnamese-Style Vegetable Soup

Ingredients:

1 onion, diced

2 Tbsp. tomato paste

2 whole star anise

1 Tbsp. fresh ginger, peeled and minced

3 cloves garlic, minced

6 cups water

1 tsp. ground pepper

½ tsp. Chinese five-spice

½ tsp. curry powder

2 carrots, peeled and sliced

Directions:

Place all ingredients in a heavy stock pot.

Bring to a low simmer and cook until the soup is fragrant, about 30 minutes. Add water if necessary during cooking.

Serve the stew hot.
