Use 2 quarts of fresh, black-eyed peas. Soak them overnight in salted water to overcome any dryness. In the morning place the peas in a large roaster, preferably iron. Add ¾ of a pound of salt pork, cut into several pieces. Cover the peas with a liquid mixture which is ½ water and ½ claret. Tie into a (cheesecloth) sack containing leaves of marjoram, thyme, laurel, and flowers of papayas, 3 cloves and 4 black peppers. Start in a hot oven until heated, then cook over slow heat. The liquid will boil away. As it does, add dry white wine. Before removing from the heat add 1 water glass of strong coffee. Remove from heat and add 2 tablespoonsful of brown sugar and ¼ cup of brandy. The dish will take about 6 hours to cook.
