BEEF ON RICE [GYŪDON]

This is another popular donburi dish, especially among the young. There is a fast-food chain company that boasts an impressive growth record and is listed on the Tokyo Stock Exchange serving just this single item.

Serves 4

400g (14oz) thinly sliced beef steak, such as minute steak

2 medium onions, thinly sliced

80ml (3fl oz) mirin

2 tablespoons grated fresh ginger

800g (1lb 12oz) freshly cooked rice, hot

Pound the beef with the back of a heavy knife or rolling pin to flatten, then cut into paper-thin 5cm (2in) length pieces.

Heat 1 tablespoon of vegetable oil in a saucepan over a high heat and stir-fry the onions for a few minutes. Add the beef and stir-fry until it is just turning brown, then pour in 200ml (7fl oz) of water, the mirin and 80ml (3fl oz) of dark soy sauce, and bring to the boil. Remove from the heat and add the grated ginger.

Divide the hot rice between four warmed donburi or deep soup bowls. With a large spoon, scoop one portion of the beef mixture and sauce on top of each portion of rice and serve immediately.
