To be brutally honest, I got this idea from the great Gareth Ward in Wales. Making your own hoisin sauce is so simple and in a beautiful location like St Martin’s in the Isles of Scilly it seemed the right thing to do, as well as put it together with the amazing local duck that is produced on the island. It is always surprising to see just how much produce a small collection of islands makes and produces. They even have their own gin distilleries – I know this because word got around and I was kindly given two bottles!
This recipe actually makes quite a large quantity of sauce. Any leftovers can be kept in the fridge in a sealed container for up to a week, or frozen for up to three months.
