Gabriele Lafranconi, a chef in Mandello del Lario on Lake Como, does not cook with chicory, or what he calls Belgian endive, very often, preferring to use different varieties of radicchio cultivated in the open fields near to him. He usually makes these sorts of parcels in shortcrust pastry (which is more traditional) filled with radicchio tardivo di Treviso and locally produced smoked cheese. But, he’s happy to ring the changes occasionally.
