10) Breakfast Tofu Scramble (Oil Free)

Serves: 4

Time: 9 minutes (5 minutes prep time, 4 minutes cook time)

Breakfast scrambles are quick, easy, and you can add just about anything you want. This recipe includes cherry tomatoes, a potato, and an apple. Instead of eggs, you use crumbled tofu. Seasonings are up to you, as well, and since tofu is pretty bland, don’t be shy.

Ingredients:

1 block of extra-firm, crumbled tofu

1 cup cherry tomatoes

1 onion

1 diced potato

1 diced apple

¼ cup veggie broth

2 minced garlic cloves

1 teaspoon dry dill

½ teaspoon ground turmeric

Salt and pepper to taste

Directions:

1. Turn your Instant pot to sauté and dry-cook the garlic and onion until the onion begins to soften.

2. Add a bit of water if it starts to stick.

3. Pour broth into cooker, and add the rest of the ingredients.

4. Select “manual” and cook on high pressure for 4 minutes.

5. When time is up, hit “cancel” and quick-release.

6. Stir, season to taste, and enjoy!
