Red Velvet Cake was a speciality of the Waldorf Astoria Hotel in New York in the 1920s, and it’s now a top seller in cupcake form at the Magnolia Bakery in Greenwich Village.

CHOCOLATE MOUSSE CAKE

MAKES ONE 20 CM (8 IN) CAKE

FOR THE BASE

120 g (4¼ oz) chocolate shortbread biscuits (cookies)

60 g (2 oz) unsalted butter

generous pinch of salt

FOR THE CHOCOLATE MOUSSE

160 g (5½ oz) milk chocolate

100 g (3½ oz) dark chocolate (at least 60 per cent cocoa solids)

300 g (10½ oz/1 ⅓ cups) full (whole) fat cream cheese

200 ml (7 fl oz/scant 1 cup) double (heavy) cream

3 eggs

3¼ tablespoons caster (superfine) sugar

4 sheets gelatine (gelatin)
