Hand mixer
This is used to beat eggs or cream. As mentioned in making macaron batter (page 21), this mixer will let you select from fast, medium, and slow speeds.
Citrus juicer
This citrus juicer, or citrus press, is used for making lemon curd. If you don’t have a juicer, you can cut a lemon in half and squeeze it with your hands.
Plastic wrap
This is used to seal custard cream for storage. When storing it, you may want to write the name of the cream and the date it was made on the plastic wrap with a permanent marker.
