Nordic Berry, Omega & Kefir Smoothie

At least once a week I’ll start the day with a berry smoothie, and although there are infinite variations the key is to have a balance of sweet and sour, make it very cold and add some nut butters to cut through the sharpness of the berries. This is a brilliant smoothie with vital fats when you just need to down something nourishing in a hurry, or have to take your breakfast on the road.

1 cup (½ pint) blueberries (fresh or frozen)

1 cup (½ pint) raspberries (fresh or frozen)

1 cup kefir

2 small bananas (frozen slices are fine)

juice of 1 lemon plus a little zest if you like lemon

2 tablespoons omega seed mix (I use linseed, pumpkin, sesame and sunflower)

1 tablespoon nut butter of your choice (almond, cashew, peanut all work well)

1 teaspoon honey or maple syrup or more if the bananas aren’t quite ripe

1 teaspoon freshly grated ginger

pinch of ground cinnamon

ice cubes, to serve (optional—only use if the berries and bananas aren’t frozen)

Place all the ingredients in a blender and pulse for a few seconds to break up the berries and bananas. Then blend until you have a smooth, purple smoothie. Taste it before you serve and add more lemon juice or berries if it’s too bland, or some ice if it’s a bit sweet.

Variation: Kefir is a probiotic milk drink originally from the Caucasus mountains; you could use plain drinkable yoghurt instead.
