Remove the crusts from the bread and soak it in the cold milk for 10 minutes. In the meantime purée the onion and garlic together in a food processor till completely smooth (or grate them on a fine grater if you prefer). Squeeze the soaked bread and put in a large bowl with all the other kofta ingredients. Mix well until combined.
Divide the mixture into 12 balls of about 3 oz/80g each (about the size of a clementine). Cover and chill for at least an hour before cooking. This will help the flavors to combine and enable the protein in the meat to stick everything together.
