1. In a small bowl, whisk together the olive oil, walnut oil, orange juice, sherry vinegar and shallots until emulsified. Season with salt and pepper.

2. Place the orange segments and dates in a large bowl. Toss with 2 tablespoons of the vinaigrette and let marinate for a few minutes. Add the radicchio, lettuce, arugula, parsley and mint. Gently toss with enough additional vinaigrette to dress the greens. Season with salt and pepper.

3. To serve, arrange the salad on a serving platter. Tear the burrata into pieces using your hands and arrange on top of the salad. Drizzle any remaining vinaigrette over the burrata and around the salad. Garnish with the toasted walnuts and season with salt and pepper.
