200 g (7 oz) dark chocolate

200 g (7 oz) margarine

8 eggs

80 g (2¾ oz) sugar

40 g (1½ oz) rice flour

40 g (1½ oz) cocoa powder

2 pinches salt

40 g (1½ oz) chopped pistachios

Preheat the oven to 180°C (350°F). Melt the chocolate and margarine in a heatproof bowl sitting on top of a saucepan of gently simmering water (don’t let the base of the bowl touch the water or the chocolate will seize).

Whisk the eggs and sugar in a mixing bowl until the mixture is pale and frothy. Add the combined rice flour, cocoa and salt. Stir in the chocolate mixture.

Pour the fondant mixture into 4 small greased and floured moulds. Sprinkle the chopped pistachios on top. Bake for 12 minutes.

Tip

Serve warm, with some fresh berries, a berry coulis, or even a lactose-free crème anglaise.
