100G UNSALTED BUTTER
2 ONIONS, PEELED AND QUARTERED, EACH QUARTER STUDDED WITH A CLOVE
2 LITRES FULL-FAT MILK
2 BAY LEAVES
1 TABLESPOON BLACK PEPPERCORNS
A FEW FRESH TARRAGON SPRIGS
JUICE OF 1 LEMON
1 TABLESPOON FRESHLY CHOPPED TARRAGON
6 SPRING ONIONS, TRIMMED AND FINELY SLICED
SALT AND BLACK PEPPER TO TASTE
Preheat the oven to 150°C/gas mark 2.
Heat the oil in a large flameproof casserole dish over a high heat. Season the meat, then brown it on all sides. Add the butter and onions and fry for 1 minute. Add the milk, bay leaves, peppercorns and rosemary, making sure the pork is completely covered in milk.
Place in the oven, uncovered, and roast for 1½ –2 hours until the meat is tender. Transfer to a plate and keep warm.
Skim the excess fat off the milk, then return the pan to the heat and simmer the liquid until thickened. Season with lemon juice, salt and pepper, then stir in the tarragon and spring onions.
Carve the meat and serve with some of the cooking juices poured over.
