Şeftali kebabı or seftalia, typically Cypriot grilled sausages wrapped in caul instead of intestines, are Turkish to judge by their name: şeftali means ‘peach’, but why this term should apply to sausages is mysterious. Souvla, historically a dish for special occasions, is meat marinaded, spitted and grilled over charcoal; its name is Latin (subula = ‘spit’). Also skewered are souvlakia – but this diminutive name is used in Greece too – whether pork, chicken, seftalia, loukaniko sausage, mushrooms or halloumi cheese – and then stuffed into or wrapped in pita.
