Baked pasta with cauliflower

This simple but tasty pasta bake is a great way of making cauliflower go further. You could even try using broccoli or Romanesco, if you prefer or have these ingredients to hand. To make it vegetarian, simply omit the ham, and if you have any other cheese you want to use up, just add to the dish, but make sure all the cheeses you use are suitable for vegetarians.

Serves 4

3 tbsp extra virgin olive oil

2 garlic cloves, lightly crushed and left whole

500g (1lb 2oz) cauliflower florets

approx. 300ml (10fl oz) hot water

250g (9oz) dried sedani pasta or pennette

20g (¾oz) butter, plus extra for greasing

60g (2¼oz) grated Parmesan cheese

1 ball of mozzarella cheese (about 125g/4½oz), drained and roughly chopped

50g (1¾oz) cooked ham, finely chopped

15g (½oz) breadcrumbs (fresh, dried or stale)

sea salt and freshly ground black pepper
