Cherries provide natural sugars, vitamins C, K, and folate. They're rich in the carotenoids beta-carotene, choline, zeaxanthin, and lutein. They're also a good source of the minerals iron, magnesium, and phosphorus.

In European health spas, people go on cherry “cures,” where they eat nothing but cherries. Recent research shows that short fasts can actually provide benefits, but hasn't addressed this form of fasting yet.

Traditional herbalists use the fruit stalks of cherries as an astringent, a diuretic, and a tonic. They recommend this for cystitis, edema, bronchitis, diarrhea, and anemia, but the decoction contains amygdalin and prunasin, which could change into cyanide. Small amounts of these natural wannabe medicines have been shown to stimulate respiration, promote digestion, and make people feel well, but their use is controversial, as cyanide can be deadly. It can cause gasping, weakness, excitement, pupil dilation, spasms, convulsions, coma, and respiratory failure.

All parts of the tree contain these substances, even the cherry stones. However, cooking destroys them.
