We love this with mashed potato and mixed veg in winter and sweet potato fries and salad in summer!

RAGU

This is one of my favourite ways to use up cooked lamb. It is quick and simple to do and tastes great. I like to serve it with garlic toast.

Serves 4

1 tbsp oil

1 onion, diced

3 garlic cloves, minced

400g pasta

2 tbsp tomato puree

1 tsp dried oregano

1 carton passata

1 tsp brown sugar

1 carrot, grated

50g red lentils

1 tbsp Worcestershire sauce

300g cooked lamb, finely diced

125g ricotta cheese

Heat the oil in a large pan over a low heat and fry the onion for 2 minutes. Add the garlic and cook for 2 minutes more.

Cook the pasta following the packet instructions.

Stir the tomato puree and oregano into the onion and garlic, then add the passata, brown sugar and grated carrot. Tip in the lentils and add 200ml of water. Bring to the boil, then reduce the heat. Add the Worcestershire sauce and diced lamb and cover with the lid. Cook for around 15 minutes until the lentils have softened, stirring occasionally and making sure there is enough liquid. If it starts to stick, add more water.

Serve over the pasta and top with a little ricotta cheese.
