CHICKEN PILAF

Nothing beats a fail-safe pilaf recipe for a quick but nutritious midweek dinner.

3 mins prep • 17 mins cooking • Serves 4 + 4 leftover portions

1 tbsp oil

2 onions, chopped

150g frozen sliced carrots

3 garlic cloves, crushed

2 red chillies, finely chopped (optional)

150g frozen peas

400g long-grain white rice

250g leftover cooked chicken, shredded

1l chicken stock

150g frozen spinach

Heat the oil in a large pan, then add the onions and carrots, and fry until they start to soften.

Add the garlic, chillies (if using), peas and rice, and stir to coat in the oil.

Stir in the chicken, then pour in the stock and gently bring to the boil.

Put a lid on the pan and simmer for 15 minutes.

Stir the spinach through and, once heated through, serve.
