Birthday Cake Bars

These Birthday Cake Bars taste like a lemony sweet birthday cake with a melt-in-your-mouth texture and creamy frosting. These bars are liked by both children and adults, and they are not overly sweet thanks to the citrusy flavors. In addition to lemon, the dough and the frosting contain a special ingredient that makes these bars lush and soft: coconut yogurt. Vegan sprinkles, which do not spread color when baked, are a must when making these fun and pretty bars.

½ cup (100 g) granulated sugar

⅓ cup (75 g) vegan butter, softened

⅓ cup (80 g) coconut yogurt

1 tsp vanilla extract

1¾ cups (225 g) all-purpose flour

⅓ cup (30 g) almond meal

½ tsp baking powder

¼ tsp baking soda

½ tsp salt

1 tsp zest of 1 small lemon

¼ cup (40 g) vegan sprinkles

Frosting

1 cup (120 g) confectioners’ sugar

2 tbsp (30 g) coconut yogurt 1 tbsp (15 ml) lemon juice ¼ cup (40 g) vegan sprinkles
