Instructions:
1. Heat 2 tbsp. of butter and the oil in large pan on med-high heat. Work in batches to season the lamb as desired and cook for 18-20 minutes, turning so all sides brown. Transfer lamb cubes to plate.
2. Add the tomatoes, garlic, cauliflower stems and onions to the pan. Cook for 8 to 10 minutes, till golden. Add the wine, cumin, cinnamon and tomato paste and cook for 3-4 minutes.
3. Add lamb and stock and boil. Reduce the heat level to med-low. Cover pan. Cook for 2 hours +/- till lamb meat is quite tender.
4. Add corn starch mixture and stir. Return mixture to boil. Reduce the heat level to med. Stir in dates, harissa, kosher salt & black pepper. Cook for 5 more minutes.
5. Heat the oven broiler.
6. Stir remainder of butter along with smoked paprika in medium bowl. Season as desired. Place the florets of cauliflower on cookie sheet. Toss with the paprika-spiced butter. Stir as needed while broiling for 8-10 minutes, till florets are chewy and a bit charred.
7. Ladle the stew in individual bowls. Use almonds and florets to garnish and serve.
