Cooking + Prep Time: 30 minutes
Ingredients:
2 eggplants (aubergines)
2 tbsp. of oil, olive
1/2 cup of onion, chopped
2 chopped garlic cloves
1 tsp. of paprika, smoked
1/2 tsp. of chili flakes, mild or hot, as desired
1/2 can of tomatoes, chopped
2 flaked, deboned, smoked mackerel fillets
Salt, kosher, as desired
1 tbsp. of parsley, chopped
