Smoky speck, starchy rice simmered in wine scented with rosemary and juniper berries, tangy, freshly grated pecorino cheese—what’s not to love? I serve this as a starter, but everyone prefers it to anything I serve for dinner, so I think this dish will have to graduate to entrée. Sometimes I add chopped or sliced roasted beets to the dish. The sweetness balances the speck.
