Butter Rings

Like the French used to say, butter makes everything better. Nobody knows exactly where and when butter was first produced, but one of its oldest representations was found in a Greek mosaic dated 3000 BC. Butter became an essential ingredient for cooking, but its main use was in baking. Nothing tastes like it, and so it doesn’t lend well to substitutions—not even margarine. This recipe was originally made with lard instead of butter, which was delicious. But in the last hundred years, as it was deemed unhealthy, lard fell out of fashion and many recipes in Europe were altered accordingly. For this recipe you will need two round cookie cutters: one that is about 1¾ inches (4.5 cm) in diameter and one that is about ½ inch (1.5 cm) in diameter.

MAKES ABOUT 2 DOZEN COOKIES

COOKIE DOUGH

1¾ CUPS (210 GRAMS) ALL-PURPOSE FLOUR

¼ CUP (60 GRAMS) GRANULATED SUGAR

1¼ STICKS (145 GRAMS) UNSALTED BUTTER, AT ROOM TEMPERATURE

2 MEDIUM EGG YOLKS

TOPPING

1 MEDIUM EGG WHITE

¾ CUP (80 GRAMS) CONFECTIONERS’ SUGAR

FILLING

½ CUP (140 GRAMS) STRAWBERRY JAM
