Caponata

Caponata is a Sicilian dish centered around eggplant. With a spread-like consistency, caponata can be paired with almost anything, served atop a slice of crusty fresh bread, enjoyed as an appetizer, or paired as an accompaniment to a main meal. This version reimagines breakfast, lunch, or brunch by serving the caponata with a duck egg.

½ cup plus 2 tablespoons extra-virgin olive oil, plus more for garnish

1 medium eggplant (about 1 pound), cut into small cubes

1 red onion, finely chopped

1 celery stalk, finely chopped

1 cup chopped cherry tomatoes

2 garlic cloves, crushed

½ teaspoon kosher salt, plus more as needed

¼ teaspoon freshly ground black pepper, plus more for garnish

1 tablespoon chopped cured black olives

1 teaspoon drained capers in brine

1 teaspoon red wine vinegar, plus more as needed

⅓ cup chopped fresh basil

4 duck eggs

1 sprig fresh basil, leaves torn, for garnish

2 tablespoons pine nuts, for garnish
