Cover and let sit in a warm place for 3 hours. While you are waiting for your bread to rise, cut a circle of parchment paper to fit inside the lid of a 5-quart Dutch oven (if youâre using a pizza stone, the parchment is not necessary). An hour before you bake, place an oven rack in the center of the oven and carefully place your Dutch oven, upside down (with the lid on the bottom), on the rack. Preheat the oven to 500°F. (You will be baking with the Dutch oven inverted because it is easier and safer to transfer the dough to the shallower lid than to the deep pot itself.)
At the end of the 3 hours, place one of the baskets of dough, covered, in the refrigerator to slow the fermentation while the first loaf bakes. Use a sieve to lightly flour the exposed surface of the other dough. This exposed surface will be the bottom of your bread, and flouring it lightly will prevent it from sticking to your parchment. Place the parchment circle on top of the basket, followed by a cutting board or other sturdy, flat object. Pick up the basket, parchment, and cutting board as one unit and, with one hand underneath and one hand on top, quickly flip the entire stack upside down, placing everything back on the counter.
