BIRD’S EYE CHILE VINAIGRETTE

1 bunch French Breakfast radishes

3 to 5 birds’s eye chiles, to taste

6 Fresno chiles

1 large shallot

6 garlic cloves, peeled

1 bunch cilantro, leaves picked

1 teaspoon kosher salt

zest and juice of 2 limes

¼ cup fish sauce

¼ cup rice vinegar

1 tablespoon honey

¼ cup grapeseed oil

FISH

1 cup rice flour

kosher salt and pepper

4 branzino, cleaned

peanut or canola oil, for frying

TO SERVE

4 limes, halved

1 bunch cilantro, leaves picked

1 bunch parsley, leaves picked

1 red onion, cut into paper-thin slices

2 Persian cucumbers, thinly sliced
