For the dressing, in a bowl, soak the saffron in lemon juice for about 20 minutes.
Add the remaining dressing ingredients and stir to combine.
Meanwhile in a large bowl, mix together all the mushroom marinate ingredients.
In a food processor, add the bell peppers, turnips, onion, garlic and pine nuts and pulse till a rice like consistency forms.
Drain the mushrooms from the marinade.
Transfer the veggie mixture into a bowl with the tomatoes, peas, parsley and dressing and stir to combine.
Top the salad with the mushrooms and green olives.
Serve the salad with a sprinkling of paprika.
