Named for the Mexican sandal, given its ubiquitous “shoe shape,” these oval, masa-based vessels hold various toppings. They are somewhat harder to come by in packaged form than sopes but fulfill the same purpose, so feel free to swap out packaged sopes for what’s called for here. Or, simply make your own: Combine 1¾ cups masa harina, ¾ cup salt, and 1 cup hot water, plus an additional teaspoon at a time as needed, to form a cohesive dough. Shape the dough into balls and press them out into 6-inch-long, ¼-inch-thick ovals before frying them in hot oil in a pan. After topping with beans, finish them with your favorite toppings, such as shredded lettuce, cheese, avocado, onion, tomato, and sour cream. SERVES 4
