1 organic egg

1 tablespoon cornflour

Pinch sea salt

1 pound 2 ounces chicken breasts (sliced)

10 ounces groundnut oil (divided)

Stir-Fry:

1 onion (peeled, sliced)

2 bell peppers (deseeded, cut into strips)

3 tablespoons chicken stock

2-3 tablespoons of light soy sauce

2 large spring onions (sliced)

4 tablespoons cashew nuts (roasted)

Sea salt and ground white pepper

Jasmine rice (steamed, to serve)
