NOTE: Braising usually involves cooking tougher cuts of meat in a flavorful liquid until tender. I donât recommend buying anything labeled âstewing beef,â as it usually is too lean and cooks up tough. Cuts with a little fat will cook up juicy and delicious. Braised dishes taste great the next day, so you can cook this one ahead, make more than you need, and save for future meals and/or freeze some too.
HEREâS A QUICK POLENTA RECIPE: Bring 4 cups of water and 2 tsp kosher salt to a boil in a large saucepan. Stirring constantly, slowly whisk 1 cup of quick-cooking polenta into the water. Cook on medium-low heat, stirring, for 5 minutes or until creamy and coming away from the sides of the saucepan. Add 2 Tbsp butter. Optionally, stir in ½ cup whipping cream or ½ cup grated Parmigiano-Reggiano, or both. Season to taste. Serves 4 to 6.
