Dim Sum – Recipes At The Heart Of Chinese Cooking: Dim Sum Menu That Feed The Heart by Wood Keanu

Dips

1 tbsp. of sugar

3 tbsp. of rice vinegar

2 tbsp. of chopped red chilies

1 tbsp. of sesame oil

3 tbsp. of soy sauce

Procedure:

1. Whisk soy sauce, sesame oil and one tbsp. of red chilies in a bowl. (dip 1)

2. Heat sugar, rice vinegar and one tbsp. of red chilies in a pan over low heat for 2 minutes. Let it cool for 5 minutes and pour it into a bowl. (dip 2)

3. Blend prawns in a food processor till pureed. Transfer the puree to a bowl and add salt, sugar, white pepper, rice wine, sesame oil and bamboo shoots and combine well.

4. Spread wrappers on a clean surface and put small portions of prawn mixture in the center of each of wrapper. Fold the wrappers in the shape of semicircles and seal the edges of wrappers with the fingers.

5. Put the parcels into the bamboo steamer and steam for 5 minutes over a pan of simmering water while covered. Serve the packets steaming hot with dips.
