• Forming an Olive Oil Wreath •

Working with a 14-inch cast-iron baking pan helps to make a uniformly round wreath. Results will be a bit more rustic but no less beautiful if you use a cookie sheet.

(1) Olive oil dough proofed in a lightly oiled 14-inch cast-iron baking pan. (2) To make the épi, cut the dough with scissors held at a 60-degree angle, leaving the cut dough still attached. Lift and drape the cut piece to one side.

(3) Repeat the cuts, alternating the side the pieces are moved to, as you go around the wreath.
