Lobster Tacos
MAKES 4
2 fresh lobsters, heads removed and reserved, tails cut in half lengthways, claws removed (see Tip)
4 small Corn Tortillas
1 small radicchio, torn
1 kohlrabi, grated
FOR THE GARLIC BUTTER
75g salted butter, softened
20g fresh parsley, chopped
½ red chilli, minced
a dash of brandy
2 garlic cloves, minced
FOR THE LOBSTER SAUCE
the reserved lobster heads
25g butter
a little olive oil
1 small onion, finely chopped
1 small carrot, finely chopped
1 celery stick, finely chopped
1 garlic clove, minced
1 tablespoon tomato purée
½ teaspoon cayenne pepper
1 sprig of fresh thyme
4 fresh parsley stalks
1 bay leaf
25ml brandy
25ml dry white wine
200ml water
2 chipotles en adobo, minced
juice of 1 lime
200ml mayonnaise
