Ingredients

1 head cauliflower, cut into florets

2 tbsp vegetable oil

1 tsp cayenne pepper

1 tsp salt

1 tsp ground turmeric

1 tbsp butter, cut into small pieces

1 quart chicken stock

1 large yellow onion, diced

1 C. heavy whipping cream

1 tsp chopped garlic

Salt and ground black pepper to taste

1 tsp curry powder

2 tbsp chopped fresh parsley

Directions

1. Set your oven to 450 degrees F before doing anything else.

2. In a bowl, add the cauliflower florets, vegetable oil and 1 tsp of the salt and toss o cot well.

3. Spread the cauliflower onto a baking sheet.

4. Cook in the oven for about 25 minutes.

5. In a large pan, melt the butter on medium heat and sauté the onion for about 5 minutes.

6. Stir in the garlic and sauté for about 2 minutes.

7. Stir in the curry powder, cayenne pepper and ground turmeric and sauté for about 5

minutes.

8. Stir in the roasted cauliflower and stock and bring to a boil.

9. Reduce the heat to low and simmer for about 10 minutes.

10. With an immersion blender, blend the mixture till smooth.

11. Stir in the cream, salt and pepper and remove from the heat.

12. Serve with a garnishing of the parsley.
