Strozzapreti with Sausage & Walnuts

serves 6 to 8

1-1/2 pounds ground spicy Italian sausage

10 whole sage leaves

1-1/2 cups white wine

1 cup coarsely chopped walnuts

pinch of fennel seeds

pinch of saffron

salt and pepper

3/4 cup heavy cream

pinch of red pepper flakes

1 pound strozzapreti

grated Parmigiano

Bring a large pot of salted water to a boil.

In a large skillet over medium-high heat, brown the ground sausage with sage leaves, about 6 minutes. Add the wine and deglaze the pan. Stir in walnuts, fennel seeds, saffron, and salt and pepper to taste, and cook a few minutes longer. Lower heat and stir in cream.

Cook pasta in boiling salted water until al dente. Drain, reserving pasta water.

Add the cooked pasta and 1/2 cup pasta water to the sauce, and toss gently on high heat for a couple of minutes. If needed, add a little more pasta water.

Sprinkle with Parmigiano and serve.

The pasta shape strozzapreti, or “priest-choker,” is a long cylinder cinched, or “choked,” in the middle. One shape, many stories. I’ll tell one of them. My grandfather Angiolo used to say, “Don Pietro, do not eat so fast, or you will choke on that pasta!” Angiolo reflected perfectly the diffuse Tuscan anti-clericalism . . . whereas his wife, Laurina, was the priest’s most ardent supporter. So, of course, Don Pietro, as were many caretakers of small dioceses, was invited for lunch every Sunday. Big belly, long black tunic, happy face, rosy cheeks (from the wine), and always hungry. I loved him. He looked forward to a good lunch and good wine, but always ate dangerously fast. So . . . remember to eat this pasta slowly, and go back for seconds!
