Shooter’s picnic

A shooter’s sandwich travels particularly well, but you need to make it the night before.

Ingredients

•1 ciabatta loaf

•1 chicken fillet

•6 rashers smoked bacon

•1 can of Batchelors Cream of Mushroom Condensed Soup, or similar

•1/2tsp thyme

•Greaseproof paper and string/baking bands

Method

Cut the bacon and the chicken into 1cm chunks and cook them in a hot dry pan for about ten minutes, stirring frequently. Meanwhile, cut the ciabatta in half horizontally and hollow out the loaf using your fingers. Spread the top and bottom of the loaf with the condensed soup, then add the cooked meats to the bottom of the loaf. Sprinkle with the thyme and assemble the sandwich. Do this while the meat is still warm to keep the sandwich moist.

Wrap tightly in greaseproof paper. Traditionally, this is tied with string, but it’s far easier to hold it all together using baking bands, which you can scrounge from any good butcher. Place it in the fridge, under a chopping board weighed down with tins, and leave overnight.

The following day, the sandwich will have maintained its shape; the flavours will be well merged. Slice between the strings into individual sandwich-sized portions and enjoy.
