Elder-Flower Fritters

Mix a thin pancake batter. Heat 1 quart vegetable oil to 380°F, dip a branch of the flower heads into the batter, drip or shake off excess batter, and fry quickly. Repeat. I use 1 small packet of biscuit or pancake mix stirred with 1 cup or more milk.

Elderberry Pie

Preheat oven to 350°F. Make a double piecrust according to the directions on page 183. Mix 1 quart ripe picked elderberries thoroughly with 1 heaping cup sugar, 1 Tbsp. cornstarch, 1 Tbsp. lemon juice or cider vinegar, and 3 Tbsp. melted butter. Pour them in the bottom crust. Cover with the top crust. Press the top and bottom crusts together, make some slits in the top to let steam escape, and bake the pie until golden.
