The legacy of Cork ’N Cleaver is evident in one of the most upscale of Fort Wayne’s restaurants, Eddie Merlot’s. William Humphries’s early restaurant experience was gained as a busboy at Cork ’N Cleaver. After college, Humphries became a franchisee in Subway restaurants, opening his first in Fort Wayne in 1983. Today, he oversees 750 locations in Indiana and Ohio. His vision of Eddie Merlot’s, which bills itself as “one of America’s great steak houses,” was realized in 2001; there are now restaurants in Indianapolis, Cincinnati, Chicago, Detroit, Pittsburgh, Denver and other locales.
