THE ADVANTAGES OF OLIVE OIL

Most oils are extracted using solvents whereas olives are compacted in presses to produce the oil without the use of solvents. The colour and flavour of olive oil bear witness to the antioxidant polyphenols it contains. Use a good olive oil as a salad dressing, or in circumstances where you will really taste the flavour, but buy a less special one for cooking.

Meat and poultry

In almost all countries that border the Mediterranean, meat is part of the meal rather than its main focus. Red meat and fatty meat products like sausages and bacon should be eaten in moderation, and they should always be cooked in a healthy way – grilled, for instance, rather than fried. Get into the habit of removing visible fat before cooking to reduce the likelihood of succumbing to temptation afterwards. Stir-frying is a great way to cook meat; you need lean meat to start with, and a little goes a long way once it is cut into the necessary small pieces. The leanest cuts of red meat are topside of beef, rump and fillet steak; pork fillet and loin steaks; and cuts of game, such as venison.
