Soups/Stocks/Bases

As we get into the soups, the first thing we need is the base or stock. With bone broths getting so popular, let’s create our own, and we can use these to start our soups. When I first started in the restaurant industry, we always had a stockpot cooking. In that pot would be either beef bones or chicken bones. Then we added mirepoix (carrots, celery, and onions) and water. This pot would simmer on low heat all day. That was the stock we used for all our soups and sauces. Now, in restaurants, okay, I should be fair, most restaurants, defiantly the chains, use bases. And in those, the number one ingredient is salt, then maybe a little chicken/beef fat. Then we decide to make our own, so we go to the store buy chicken stock. But guess what? In most store-bought stocks, the main ingredient is salt.

We want to reduce sodium in the foods we eat, so in the recipes in this book, when it calls for a broth or stock, they will be homemade.
