Add the stock and bring to a boil. Then reduce the heat and simmer until the chicken is cooked through, about 20 minutes. Transfer the chicken to a plate, leaving the stock simmering in the pan. When the chicken is cool enough to handle, discard the skin and bones. Pull the meat against the grain into large slivers.

While preparing the chicken, stir the pasta into the simmering stock and cook until al dente.

Return the chicken and vegetables to the pan and cook until just heated through. Stir in the pesto and season to taste with salt. Top with Parmigiano-Reggiano, and serve hot.
