In 2017, Canada’s 150th anniversary, I was lucky enough to go on the C3 (coast to coast to coast) expedition as a guest chef. I was on the Northwest Passage section in the height of the Arctic summer. The only fresh ingredients available to us were Arctic char, caribou, and wild berries.

I decided to jumpstart a sourdough starter with some foraged berries—crowberries, blueberries, and cranberries. This starter stayed on the ship for all of the subsequent travellers to enjoy, and I brought some home to use at Burdock. It has brought our sourdough to a new level of deliciousness. If you don’t have access to Arctic berries (I realize it is far-fetched that you would!), forage the wild berries that surround you, such as salal, Oregon grape, saskatoon, rosehip, salmon, or huckleberries.
