Preheat the oven to 425°F/220°C.

Slice the lemons a finger-width thick as they will shrink in the heat. Arrange them on a baking sheet on parchment brushed with oil to make it easier to turn the slices without tearing them. Roast until the lemons’ sugars seep out and caramelize along the fruit’s edges, about 10 to 15 minutes, turning once with a spatula. Letting them char a little adds more flavor.

Note: Store the slices in a jar, covered in vegetable or light olive oil. They will last several weeks in the fridge.
