COLD CUCUMBER SUMMER SOUP

3 medium waxy potatoes

4 large eggs

4 cups (960 ml) cultured buttermilk

4 cups (960 ml) vegetable broth

1 tsp salt

2 tbsp (4 g) finely chopped fresh dill

1 tbsp (2 g) finely chopped fresh parsley

Ground black pepper, as needed

1½ cups (225 g) diced ham or cooked chicken breast

10 to 12 large radishes, diced

4 medium cucumbers, diced

3 green onions, diced

There’s nothing more refreshing in the hot summer months than Russian okroshka! This cold cucumber soup is made with a tart and creamy broth, diced ham and eggs, radishes and, of course, cucumbers. I make my soup with buttermilk (you can also use a combination of sour cream and kvass). The slightly tart broth is the perfect complement to the crunchy vegetables and salty ham pieces. This soup can be made with or without the diced cooked potatoes; they can be omitted to cut down on prep time.
