In a large pot, bring 2 quarts water to a boil and add 2 tablespoons plus 2 teaspoons salt.
Meanwhile, in a sauté pan over medium heat, combine the butter, tomato sauce, vegetable stock, and salt to taste and bring to a simmer.
Add the pasta to the boiling water and boil for about 8 minutes, until tender but still with a bit of chew.
Using a slotted spoon, transfer the pasta to the sauté pan. Stir to coat and cook until the sauce begins to thicken, about 2 minutes. Remove from the heat, add the grana padano, and toss to mix. Transfer to a serving plate and pile the ricotta on top of the pasta. Finish with the basil oil and more grana padano and serve.
